Tiramisu with rum twist


  • 250 g mascarpone
  • 100 g sugar
  • 1 pack long fingers
  • 3 eggs
  • 200 ml pineapple juice
  • 50 ml CARUMBOLA Truly Exotic


  • Separate the eggs
  • Mix the mascarpone with the yolks and sugar and beat until smooth
  • Beat egg whites until stiff
  • Mix CARUMBOLA Truly Exotic with pineapple juice and dip fingers in it
  • Fold the egg whites into the mascarpone mixture
  • Arrange everything in layers in a dish, start with a layer of ladyfingers, then a layer of mascarpone, repeat until dish is full
  • Leave to set in the fridge for a few hours
